Hi Peter - welcome aboard!
You should find plenty of inspiring info on this site to help with your refurbishment.
I'm just completing mine after 18 months, and it's been a lot of fun. I've also learnt a great deal about working on boats, and am now putting my vessel QUMBU through some sea trials.
One job underway is to put a removable bar across the centre of the cockpit (just below the seat level) so I can attach and use the main sheet from there, rather than having the transom mounted set-up. I'll leave that rear rail and car there for cruising only, when I might have a few on board and need more cockpit space, or I want to erect a Bimini.
Otherwise, for racing, I think the centre attachment should be much better, and allow me to tack without having to face astern every time. It will also allow the crew to operate the mainsheet if needs be.
I'm also having my mainsail re-cut, as it currently has too much belly and is underperforming.
These are things I'm finding out by doing.
And yes, it's a great little boat to sail; very stable!
Cheers,
