On Margarita, the original slide-out galley has been removed and instead we use a BBQ mounted in simple gimbals on the rear side rail, connected to a gas bottle mounted on the corner post. As it takes a few minutes to set up the BBQ we also carry a butane gas burner (camping type) to do simple things like boil the billy.

Port side aft cabin. Note the slide-in table under. Also had a hatch on the RHS for emergency gear.
The table can be used inside the cabin, with a fold-down leg, and a (separate) removeable cross-bar mounted on the cabin divider. It also fits between the cabin bunks providing a double bunk athwartship.
The table also has fold-down legs which allow it to be used in the aft cockpit. We use it in this fashion most of the time.
In the forward cabin, we've removed the cushions as there are only two of us and we sleep in the cabin bunks. This allows us to use the forward cabin for storage. "Cargo" net is made out of bird netting.
Water storage is a 25l plastic drum, secured with a luggage strap. We carry additional water as needed, but this arrangement allows easy access to the main supply. The water and other containers (tucker box etc) are arranged to allow the hatch over the porta pottti to be unrestricted.
