I am a bit concerned that you mention the centre board is protruding some 10mm below the keel. As the boat rolls over the rollers on launch, the weight of the boat will press on the c/b with quite a lot of force. My guess is that maybe the shackle for the lifting cable has been twisted and is stopping the board from lifting correctly. To be safe, I would float the boat off the trailer, rather than the normal tilt launch. That will reduce or eliminate any load on the centre board. Floating off is a bit of a pain, but can be done. Another option would be to jack the boat up a little bit on the trailer, and see if you can jiggle the c/b down and back up.

Thanks for posting my query..
It seems I was a tad over cautious and I've had another crawl under the trailer (supported with car jacks) and measured the CB drop and it's actually less. The very end of the CB is about 2mm down at the most. I think my 563 will launch ok as the 2mm hand is located right at the curve of the CB and it looks like my 563 should launch without snagging the 2mm CB hanging down. It was too awkward to get the camera under to snap a photo.... the CB does look like it may need removal because it looks quite rusty. I might plan CB removal as a winter layup job although, I may need to get to the local marina and get a crain as I;m unsure about tackling removal of my 563 off the trailer in the driveway.... but that's for later.
